This Popcorn Shrimp Is A Parasite Round
With its twisted, lumpy form, the "Shrimp of the Woods" is a lot like its namesake -- small, firm, yet chewy in texture and the perfect fungi to caramelize with herbs and olive oil, sauté with white wine, sprinkle with red pepper flakes, and serve over pasta. Mycologists will tell you that, though delicious, the cold hard truth is the Entoloma abortivum is actually a forest parasite, aggressively dismantling the poor old honey mushroom and forming these strange, puffy popcorn balls as a result. OK, let's eat!
