There are all kinds of onions — sweet, white, red, green. Looks like your white onion has hung around long enough to sprout some green. With the right exposure of warmth, humidity and light that concentric, tear-inducing orb will want send a stalk up from the center. As long it’s still firm, you can grill it, pickle it, or blend it into a sauce, like… maybe… with green chilis, perhaps?
