A Proper Pint O'Round
A proper pour of Guinness is a two-part pour, not one-and-done. First, hold the pint glass at a 45-degree angle and fill half full, then set it aside for a minute or two. Then, fill the rest while holding the glass straight. Why the pause? Well, the delicious dark porter requires a 'surge and settle' phase between pours to allow the dark to slowly sink beneath the creamy, white foam on top. Proper, indeed!
