The artichoke is a curious thing. Looks like an armored vehicle. An edible part is a flower. Is considered a vegetable. And it’s actually a thistle. The prickly, scale-like triangular structures surrounding the head are bracts that protect the flower inside. The plant is huge. It grows up to six and a half feet tall, with 30 inch leaves, and a flower head diameter of six inches.
