Green-Cracking Russula Round
The Russula mushroom is one of the most common species, with 750 different types around the world featuring a variety of brightly colored caps. Growing up to 6 inches in diameter, the Russula virescens stands out on the forest floor, like a stained glass window or ornamental quilt with teal, olive-yellow and rusty-brown patterns. It can be eaten, perfect when grilled, fried, sautéed, or just raw right out of the ground. With a taste described as mild, nutty, fruity, or even sweet, time to get crackin'!
